The water in a tank can look perfect and still be killing fish. Four numbers tell you what's really going on — here is what each means and where it should sit.
The four numbers that matter

Ammonia and nitrite: the dangerous two
These are the ones that kill fish. Ammonia comes from waste and uneaten food; nitrite is produced as bacteria break that ammonia down. Both should read exactly zero in an established tank. Anything above zero means the tank isn't keeping up — usually because it isn't cycled yet, is overstocked, or the filter was disturbed. The fix is the same: a water change to dilute it now, and time (or more filtration) to fix the cause.
Nitrate and pH: the manageable two
Nitrate is what ammonia and nitrite eventually become. It's far less toxic, but it builds up, and that's the whole reason you do water changes — to keep it low. Rising nitrate is your cue to change water.
pH worries beginners more than it should. Most common community fish adapt to a wide range of pH; what actually harms them is a pH that swings around. Chasing a "perfect" number with chemicals usually causes the very instability you're trying to avoid. Aim for steady, not specific.

You cannot see any of this — safe water and lethal water look identical.
